Homemade Carbonara
You may not know this, but I once lived in Malta for a while, close to Italy, which allowed me to enjoy authentic Italian food every week at very low prices. That made me fall in love with Italian cuisine: the desserts, the pizzas, the pasta... Mamma mia, la pasta!
Naively, I thought that being "close" to Italy, Spain would also have good Italian food. Unfortunately, I ended up in a so-called Italian restaurant that was far from authentic: a major disappointment. So, I decided to make my favourite pasta at home. It’s simple, delicious, cheap, and filling. Here it is.
Ingredients
As shown in the image; pasta, egg yolks, pecorino, and guanciale.
Steps
- Cut the guanciale into cubes and cook over medium-low heat until it releases its fat. Set aside
- In a bowl, mix 4 egg yolks with pecorino cheese and black pepper
- Cook the pasta in plenty of salted water until al dente
- Add the cooked guanciale and some of its fat to the egg mixture, then slowly add pasta water to create a creamy sauce without cooking the eggs
- Finally, add the pasta, mix well, and serve
